Bread


Last couple of weeks we have worked on making bread. All kinds of dough, rich, lean, sweet, sourdough, and laminated. I had a former student who is currently in college come in and want to teach the laminated dough. It really is incredible how much he learned while he was a student. Even when you think they are not paying a bit of attention they do soak up some of it up. This student taught the entire lesson and probably did it better than I would have. He showed the different steps of layering butter by rolling and folding, rolling and folding. Then the students made their own dough as he carefully watched over them for their turn of rolling and folding. These were probably the best crossiants that have ever come out of that kitchen. The students paid attention because they could see that he was doing something that he loved to do. His passion made them want to learn, it got them excited about what they were about to do. It made me think how it really shows in some teachers who love what they do, how lucky their students are and how really lucky those teachers are.
